The children and I have been looking at Jenny Kostecki-Shaw's beautiful book, Chai Pilgrimage, and talking about her "Chai adventure through" Southern India. We are also smelling some of the many Indian spices found in Chai tea, including: ginger, cardamom, cinnamon, licorice, fennel, clove and black pepper corns. With closed eyes, we imagine a world filled with brilliant colors and forests rich with the enticing scents of spices.
We used these spices to slow-brew some herbal chai of our own, adding rice milk and honey just before serving. The resulting drink is a "two-thumbs up" according to one enthusiastic child.
All this talk of food, travel and spices has led to a renewed interest in cooking. The children are busily drawing their favorite recipes to make with us at school. Here are a few:
